What sizes do cans of tomato paste come in? The tomato paste can sizes above offer small and larger retail options. For recipe measurement, Contadina’s 6 oz label lists about five servings of two tablespoons: approximately 10 tablespoons, or ⅝ of a US cup. That estimate comes from a rounded serving declaration; it is not a universal weight-to-volume conversion for every paste.

Regional packs and recipe conventions differ. Check the product name and the unit on the label before substituting one can for another. A net weight in ounces or grams does not tell you the volume in cups, nor does it identify the can’s diameter and height.

Sauce, Paste, Puree: How the Product Type Sets the Can Size

Can Names and Dimension Codes: Two Different Labels

An old recipe’s “No. 2” or “No. 10” is a traditional can designation. A code such as 307 × 306 is a diameter-and-height notation, with each three-digit group combining whole inches and sixteenths. In that notation, 307 reads as 3 7/16 inches and 306 as 3 6/16 inches. Traditional names and dimension codes are related through reference charts, but they are not interchangeable labels or guaranteed net weights.

A #10 can of sauce and a #10 can of paste can carry different net weights because product density and fill level differ. Different labeled weights do not, on their own, prove that the cans have different external dimensions. Recipe yield comes from the contents; equipment fit comes from the can drawing.

What “Buffet Size” and Other Old Names Mean Today

“Buffet size” is an older small-can description, often associated with an approximately 8 oz pack in can-size guides. If a recipe gives only that nickname, check its original quantity notes and serving count before buying a replacement. Likewise, “one can” without a size should not automatically be interpreted as a 6 oz paste can or a 15 oz sauce can.

Substitute by quantity. Once you establish how much of the same tomato product the recipe needs, choose a current pack and measure that amount. A can nickname alone is not enough to calculate a reliable substitution.

Reading the Label: Net Weight, Acidity, and the Seam

A pack size tells you how much product is declared, while the product formulation and closure determine other requirements. Keeping those questions separate helps avoid mistakes when comparing tomato products or setting a production specification.

Net weight and volume. A 29 oz net-weight declaration is approximately 822 g, not 29 fluid ounces. Similarly, 796 mL converts to about 26.9 US fl oz, a volume that cannot be compared directly with a 28 oz net weight. The FDA Food Labeling Guide’s net-quantity section distinguishes weight and fluid measure. Check net weight with a suitable scale and subtract the container’s tare; do not infer underfilling from a measuring cup. Drained weight, where relevant, is a separate measure from total net contents.

Acidity and processing. Do not assume every tomato sauce has a pH below 4.6. Formulation and the finished equilibrium pH matter. The FDA’s acidified and low-acid canned food guidance defines low-acid canned foods using both pH and water activity and specifically excludes tomatoes and tomato products with a finished equilibrium pH below 4.7. This exception is not a general exemption from safe processing. Have a qualified process authority determine the applicable classification and thermal process for the actual formulation and container.

Seam integrity. The double seam must meet the can-and-end supplier’s specification. Damage or an inadequate seam can compromise the package; acceptable acidity does not compensate for a defective closure. Can and end coatings also need to be suitable for the formulation and processing conditions.

When the pack changes, review the process. A change in can dimensions, product consistency, or fill conditions may require reassessment of the established thermal process. Confirm that review before putting a new format into production.

Can Size and Your Production Line: What Filling and Seaming Can Handle

Can size is a production-line decision because it affects conveying, filling, closing, and case handling. Plan the formats you want to run before ordering equipment, then ask which adjustments, change parts, and trial runs are needed. Some changes can be handled within an existing machine’s range; others require different equipment.

Filling follows the product. Concentrated paste and some purees need a filling system that handles their consistency at the intended filling temperature. A piston filler is one form of volumetric filler; it is not a separate category from volumetric filling. Select the dosing method, hopper arrangement, and nozzle for the product’s viscosity, particles, target weight, and output. One suitable configuration may handle more than one tomato product, but that should be established through trials.

Seaming follows the can and end. A seamer is specified by its supported can dimensions and closure tooling, not by a retail net weight. A machine whose maximum diameter is 130 mm cannot be assumed to handle a #10 format with a nominal diameter around 157 mm. For a producer running both retail and foodservice cans, verify the actual diameter, height, filled weight, end profile, and handling clearances for every format. Changeovers may involve chucks, rollers, lifter settings, guides, and other parts depending on the machine and can design.

Closing conditions follow the process. The required headspace and vacuum conditions depend on the product, filling temperature, container, and established thermal process. Nitrogen flushing is an optional process choice, not a universal requirement for tomato sauce. A residual-oxygen figure from a different product or machine configuration should not become the acceptance target for this line.
